Marcella's Kitchen

Marcella's kitchen is certainly one of the reference points of the Agriturismo. The guests come together for meals with the rest of the Bartoli family around the large table of the common dining room. Ingredients, recipes, and little secrets that originate from the culinary traditions of the old rural families always surprise the palate of those who are not familiar with them and often the guests profit by taking notes of the recipes and advice that Marcella is always happy to provide. The cooking is very simple because of its country origins. What makes it surprising is the quality and authenticity of ingredients used, in addition to their originality and variety.
Here at Patrico, pigs, sheep, cows, and chickens are raised as in the old days, and at table we are able to enjoy dishes such as lamb's sweetbreads, pasta with wild boar, chicken in the style of Norcia, sage-flavored pasta, ham, bacon, sausages, and wild boar salami, potatoes country style, and shepherd's soup flavored with mint.

From sheep's milk come two other products of exceptional quality and taste: fresh ricotta and pecorino cheese. Pecorino, of a particular flavor and aging, represents another jewel and pride of the Bartoli family. In almost all the dishes of the Agriturismo, the common denominator is the truffle that Felice and Pietro gather almost every day in the vast truffle preserve.
